Pineapple Upside Down Cake-Canada
For the next couple of weeks my challenge for baking cakes will be taking a different twist. I have discovered that with some of the cakes I have made that I don’t have a frame of reference. So, I don’t know if I’m doing them right or not. By the way they taste I’m assuming I’m not doing them right. So, I’m  going to be searching for cakes to taste. I will be posting my adventures.
Before I do all that I want to share with you a recipe from my dear, sweet, BFF. She made a wonderful pineapple upside down cake for me today. It’s an old, family, favorite recipe. I just have to share it with you.
The cake:
1c.  Plus 2T. Butter
1 c. Brown sugar
1 can crushed pineapple
1 c. Sugar
2 eggs
1/2 c. Milk
1-3/4 c. All-purpose flour
2 tsp. Baking powder
1/8 tsp. Salt
1 tsp. Vanilla extract
     1. Preheat oven 350F.
     2. Butter a 9”x13” pan.
     3. In a saucepan, mix together and heat 2T. Butter, brown sugar and pineapple until it starts to boil, then simmer until cake batter is ready.
     4. In a mixer beat 1/2 c. Butter and sugar until light and fluffy.
     5. Add eggs. Beat until blended.
     6. Add milk. Beat.
     7. Sift flour, baking powder, salt together. Add to batter.
     8. Add vanilla.
     9. Pour heated pineapple sauce in bottom of pan.
    10. Por batter over the sauce.
    11. Bake for 25 minutes. Check cake, making sure not to go too deep.
 Results: a moist, delicious, pineapple flavor.
Bottom Line: Quick and easy, especially if someone makes it for you.lol
